“Amazing things happen when you visit the farms and talk with the people who grow your coffee. From our experience, this partnership has truly powerful results. The story of our Santa Isabel coffee is much the same. We have been working with the Santa Isabel farm in Santa Rosa, Guatemala for nearly three years. This year, we bought our classic washed Santa Isabel—a coffee that is consistently clean, chocolaty, and crisp with acidity—but we also benefit from the experimentation of brothers Alex and Martin Keller, who created a micro lot of Pacamara varietal coffee cherries.
Pacamara coffees are known for their exotic flavors, from tropical fruit to floral qualities to extremely savory. The Keller brothers went even a few steps further than separating out the Pacamara micro lot: they dried the coffee “naturally” in its own cherry. The deep red Pacamara cherries were picked and brought to a concrete patio, where they were turned in the hot Guatemalan sun, drying slowly and evenly over a period of three weeks. They then rested for just over three months in the cherry pod. At the last moment, the cherry pod was milled off and the resulting green coffee, having absorbed some the essence of the fruit, was quickly put into Grain Pro-lined bags and exported. The results are easily one of the most exotic tasting coffees you have ever tried.
