Oscar Chacon and Francisca Cubillo Salas, both third generation coffee farmers, established the Las Lajas micro mill in 2000. Francisca has an agronomy degree from the prestigious EARTH University. She and her husband Oscar and their three children live at their micro mill, Las Lajas. The couple processes only their siblings’ coffee cherries at the mill. Most of their production is moving towards Honey Process as the years go on. Historically, the family produced the typical washed, fermented coffee that is so common in Costa Rica. Experimentation is de rigeur for Oscar and Francisca; this year a small amount of coffee was processed at the mill as a Full Natural Process. How much of the fruit’s mucilage is eliminated or not becomes a key component in how a coffee tastes. In this lot’s case, we chose to do a fully washed coffee but we skipped the fermentation that has been the norm in Costa Rica in an effort to save precious water resources.
